P\u00f4vodne by sa mal pripravi\u0165 zo surov\u00e9ho kolena bez m\u00e4sa, s\u00a0jedn\u00fdm v\u00fdpekom. Origin\u00e1l som zvykol pripravova\u0165 v\u00a0keramickom pek\u00e1\u010di. O\u010dist\u00edme 1 \u010derven\u00fa cibu\u013eu a\u00a03 str\u00fa\u010diky cesnaku. Po pribli\u017ene polhodine odlejeme vodu z\u00a0kolena. Do hrnca nalejeme \u010dist\u00fa vodu, cesnak, cibu\u013eu, borievku a\u00a0bobkov\u00fd list a\u00a0var\u00edme k\u00fdm m\u00e4so nezm\u00e4kne. Uvaren\u00e9 kolen\u00e1 vyberieme z\u00a0v\u00fdvaru, vykost\u00edme a\u00a0nech\u00e1me vychladn\u00fa\u0165. Zostatkov\u00fd v\u00fdvar m\u00f4\u017eeme pou\u017ei\u0165 ako z\u00e1klad pre chutn\u00fa fazu\u013eovicu.<br><br>V de\u0148 varenia:<br><br>O\u010dist\u00edme zvy\u0161n\u00e9 hl\u00e1vky cibule, cesnak rozdrv\u00edme. \u010cerven\u00fa cibu\u013eu prekroj\u00edme na polovicu a\u00a0nakr\u00e1jame na hrub\u0161ie pl\u00e1tky. Huby umyjeme a\u00a0nakr\u00e1jame, zemiaky o\u0161\u00fapeme a\u00a0nakr\u00e1jame na str\u00fa\u010diky.<br>Roztop\u00edme mas\u0165 z\u00a0mangalice, ale nenech\u00e1me ju zovrie\u0165 (tento krok zvy\u010dajne rob\u00edm vo WOK-u, preto\u017ee je dostato\u010dne ve\u013ek\u00fd). Do masti vmie\u0161ame drven\u00fd cesnak, major\u00e1n, \u010dierne korenie, \u010derven\u00fa papriku a\u00a0\u0161tipku soli. Vlo\u017e\u00edme zemiaky a\u00a0bez pe\u010denia premie\u0161ame (z\u00e1le\u017e\u00ed na tom, aby sa na zemiakoch uchytilo korenie, m\u00f4\u017eete pou\u017ei\u0165 aj koreninov\u00e9 zmesi na grilovanie).\u00a0<br>Vychladnut\u00e9 kolen\u00e1 prekroj\u00edme na polovicu a\u00a0ich \u010das\u0165 s\u00a0ko\u017eou vkr\u00e1jame na mrie\u017eky.<br>Spodok disku vystelieme alobalom, na ktor\u00fd uklad\u00e1me zemiaky. N\u00e1sledne uklad\u00e1me cesnak, a\u00a0kolen\u00e1 s\u00a0m\u00e4sovou \u010das\u0165ou nadol.
